Food and Drinks

The following recipes are quick ideas for food and drinks, we have not set them out the same as our monthly membership recipe cards with step by step guides. The food ideas are designed to have the children come up with their own inventive recipes with their own ingredients.  You can have weird and wonderful ingredients for them to choose from and experiment on combinations to find out what it would taste like!

Rice Paper Rolls
Rice Paper Sheets (round or square)
Shredded barbecued chicken meat
Smoked Salmon (squeeze lemon juice over salmon)
Chinese BBQ Pork or Duck
Avocado
Grated carrot
Vermicelli noodles
Snow pea sprouts
Lebanese cucumber finely sliced
Bean shoots
Alfalfa sprouts
Mint
Basil
Coriander

Dipping sauce:
½ cup (125ml) sweet chilli sauce
¼ cup (60ml) lime juice
2 tablespoons chopped fresh coriander
2 tablespoons chopped fresh mint

Set out all the ingredients in bowls on the kitchen counter or table. Place the vermicelli noodles in a bowl of hot water for 5 minutes or until softened; drain well.
Place one sheet of rice paper in a bowl of warm water until softened. Remove from water and place on a damp tea tea towel or set a damp napkin out for each person, top with your choice of herbs and fillings. Fold in sides and roll up to enclose.
If you are preparing all the rolls for the guests then place the rolls on a tray lined with plastic wrap cover with a damp paper towel and refrigerate until ready to serve. Otherwise, eat them as your make them. Serve with the suggested dipping sauce or plain hoisin sauce.
 

Make your own pizza
Ham
Pepperoni
Capsicum
Pineapple
Jar of Pasta Sauce or Tomato paste
Mushrooms
Olives
Sliced Fresh Tomato
Mozzarella Cheese or 'pizza' cheese mix
Small pocket pita breads

Preheat oven to 230°C. Use the pita breads to make individual size pizzas. Set out all the toppings in bowls and have everyone make their own pizza. Spread each pita bread with pasta sauce or tomato paste making sure it is evenly covered. Add any combination of toppings finishing with cheese. Put the pizza bases onto a pizza try or large oven tray. Bake in oven for 15 minutes or until the cheese has melted. Have a competition where everyone tries a slice of each others creation.
 
Sausages on Sticks (great for the campsite)
12 wooden skewers, soaked in hot water
2 cups of chicken or sausage mince
1 onion finely chopped
1/2 cup breadcrumbs
1 egg
1 Tablespoon tomato sauce
Grated tasty cheese and sauces for topping
Combine mince, onion, breadcrumbs, egg and tomato sauce in a bowl. Divide the mix and mould sausage shapes around each stick.
Sit around the campsite if you are using a mini charcoal grill and turn your own sausages. When they are cooked a fork to slide the sausage onto a hot dog roll.
Add grated cheese and favourite sauce for a great campsite hotdog.
Adult supervision required if children are helping with the cooking on the grill.
 

Fold-over Quesadilla (great for the campsite)
Packet Mini Tortillas
Chopped barbecue chicken
Grated Tasty or Mozzeralla Cheese
Finely sliced mushrooms
Can of corn kernels, drained
Salsa and Sour Cream as extras

Cover tortilla will a thin layer of cheese then add chicken, mushrooms and corn on top like you are making a pizza, just in reverse! Don't put too many ingredients on as the tortilla will burn on the bottom before the top is warmed. 
Place tortilla onto grill of bbq or in a fry pan with a little oil if cooking inside. Leave on grill for only a minute or so until the cheese is melting then fold-over in half, wait another minute then flip over to warm thru the other side. Give the tortilla a gently press to melt the two sides together.  Yum, eat as is or add some salsa and sour cream on top.

Heavenly Dips
Serve up some dips and nibbles. Girls might like Guacamole with Long Grissini Sticks. A fun presentation is to have two tall beer or latte style glasses with the dip in one and long grissini sticks in the other.

For another healthy option how about some Hummus or tzatziki with Carrot, Cucumber Sticks or fingers of toasted Turkish bread.

 

Berry Chillers
A great combination with the rice paper rolls for a hot summer night.
Blend 1 cup mixed berry sorbet, 2 cups cranberry juice and 1 cup of frozen or fresh mixed berries.

 

Ginger Beer Spiders
Place scoops of ice cream in the bottom of tall glassed.  Add the ginger beer and watch that the froth does not overflow. Sit back and relax around the campsite with your mates and a delicious ginger beer spider in your hand.

After the sleepless long night (for everyone), cook them up a great breakfast.
Kick start them with some healthy fruit juice, cereals and yoghurt.
Then fire up the bbq and do bacon and egg rolls or banana/blueberry pancakes with lashings of maple syrup. Send them home with full tummies and happy memories of their sleepover.
